1. Spinach cheese toast
Ingredients:
- 1 small 6-inch French loaf
- 1/2 cup shredded mozzarella cheese
- 1/2 cup feta cheese
- 100g spinach
- 1/2 bell pepper
- 5 cherry tomatoes
- 1 sprig of lettuce leaves
- Salt, to taste
- 2 tbsp olive oil
- 2 tbsp salsa sauce or tomato ketchup
Directions:
Take a small French loaf, cut it into five equal pieces at a slight angle, and bake each piece for 30 seconds in a preheated oven set at 180°C. On the slices of bread, spread a mixture of mozzarella and feta cheese. Finely chop the spinach and add it to a nonstick pan with olive oil. Cook until tender. Add bell peppers that have been coarsely chopped and simmer for a minute. Layer the bell pepper and spinach mixture on top of the bread slices that have already been smeared with cheese. It should be sprinkled with some mozzarella cheese shreds and baked for one minute at 180°C in a preheated oven. Serve with tomato ketchup or salsa sauce and garnish with lettuce leaves and cherry tomatoes.
2. Potato Bread Patties
Ingredients:
- 12 bread slices
- 2 medium-sized potatoes, boiled and mashed
- ½ teaspoon grated ginger
- ½ teaspoon diced green chili
- 1/3 cup green peas
- ½ teaspoon dried mango powder
- ¼ teaspoon coriander powder
- Milk – ½ cup
- Salt to taste
- Oil for deep frying
Directions:
A teaspoon of oil has been heated in a pan. Add the ginger and chilies after it is heated. Allow it a minute to roast. The dried mango powder and coriander powder should be added. Stir in the peas and potatoes after adding them. Add salt to taste. Milk should be used to soak the bread slices. Place a spoonful of the potato mixture in the middle of the slice. Pinch the edges of the soft bread to seal it around the potato. Deep fry the bread till golden in the oil over a medium-high flame. Serve hot with a refreshing mint chutney.
3. Bread Pizza
Ingredients:
- Bread slices
- Capsicum, diced
- Onion, diced into large pieces,
- Mozzarella cheese, grated
- Pizza sauce
Directions:
Toast the bread lightly with the minimal possible color change. On one side of the bread, spread a teaspoon of pizza sauce. Place the diced capsicum and onions on top of the sauce, followed by a generous layer of mozzarella cheese. Grill it for 5 minutes, or until the cheese melts and bubbles. Toppings such as cooked and sliced sausages, chicken breasts, meatballs, and so on can be added to make this a non-vegetarian option.
4. Bread Pudding
Ingredients:
- 6 slices of 1-day-old bread
- 2 tablespoons melted butter
- ½ cup raisins
- 4 eggs
- 2 cups milk
- ¾ cup sugar
- 1 teaspoon cinnamon powder
- 1 teaspoon vanilla extract
Directions:
Preheat your oven to 175°. Make one-inch squares of bread. Place the bread and raisins in a baking tray and press them together. Separately, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon powder. Spread the melted butter over the bread. Then, pour the egg and milk mixture over the bread and press down with a fork to ensure that all of the liquid has been absorbed. Bake for 45 minutes. Serve the bread pudding warm with ice cream.
5. Banana Bread
Ingredients:
- 2 medium bananas, mashed
- 1 ¾ cup whole wheat flour
- 1/3 cup packed brown sugar
- ¼ cup plain yogurt
- 2 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 4 tablespoon coconut oil
- 2 teaspoon vanilla extract
Directions:
In a mixing bowl, combine the dry ingredients and stir until well combined. Whisk together the mashed bananas, yogurt, coconut oil, and vanilla extract in a separate bowl. Mix the wet and dry ingredients until completely combined. Butter a loaf pan and pour in the banana bread batter. Preheat your oven to 175 degrees and bake your loaf for 55 minutes.
